    Stocking the freezer - Ideas please?

    Hello, I am 10 weeks away from baby number 2 and since I haven't really done any organising yet I thought it was about time to get serious!
    Over the next few weeks whilst I still have the energy I want to stock the freezer with meal ideas to cover the first couple of weeks being home with the baby. Last time I left it till the last couple of weeks and ended up being induced early due to blood pressure so I never got the chance and we relied a lot on takeaway as nobody else offered to cook for us!

    My Family is vegetarian so my ideas for the freezer so far are:
    1. A vegetarian lasagne.
    2. Veggo Bolagnaise.
    3. 2 or 3 different batches of soups for lunches.
    4. A couple of vegetable puff pastry pies.


    That's all I can think of at the moment that will freeze well but we are going to need more than that to cover a couple of weeks. My daughter doesn't like stir frys or dishes with a lot of rice in them so they are out the window...has anyone got any simple and quick veggo recipes that will freeze well over the next couple of months?


    Also, do roast veggies freeze well and how long for? Our family loves mountains of roasted veggies with garlic and herbs so I wanted to do a few batches and put them aside in aluminium containers, but will they freeze okay?

    i love eggplant parmigiana!
    what about a vege risotto? or potato bake
    spinach and feta pie always freezes well too. What about throwing a few pizza bases in the freezer and just adding toppings on and in the oven once bubs is here if your up to it. Best of luck with bub number 2!

    What about a zucchini slice/bake? We make ours either in a slice or sometimes as little 'flying saucers' in round bottomed patty pans. Yummy to reheat and dip in sweet chilli sauce!

    individual vegie pasties are great cos you only have to defost whatever you need.

    apricot vegies (vegie version on apricot chicken- apricot nectar + onion soup mix + onions + whatever vegies you want). then just add mashed spud.

    Most of my frozen meals are curries. I also like to make a moroccan type of thing with spices, sweet pot, chic peas, zucchini, sultanas, apricot etc and cook couscous with it. A freezer favourite is my chic pea / bean tahini rice bake thingo. Cook rice add loads of fresh basil, parsley, lemon juice, can of tomatoes, beans etc and whatever else you like really, then put in tahini & water mixed together add cheese to top if you want or cook without in the oven on about 190 for about 45mins. I love this with natural yoghurt and loads of tabasco.

    I have a few batches of frozen roast vegies but they really aren't that great when you re heat them. I don't know if it's just me but I don't like the potato They would be good to use on a pizza or to throw into a rissotto (another freezer fav I make a pumpkin one and a mushroom & corn one and throw in whey powder for extra protein)

    Frozen pizzas are also great! whenever we make one for dinner we try to make another one for the freezer. Here's a different one that you could try it's a bit time consuming so it's nice to have one already prepared in the freezer. mashed pumpkin on the base (instead of tom paste) marinate finely chopped tofu strips in tandoori and then fry. Caramalise onion with honey and then put the tofu and onion on the pizza. Put cheese on and bake. When out of the oven add sauce: natural yoghurt, mint, cucumber and lemon

    You could do some capsicums stuffed with a tomato mix similar to a bolognaise but done with lentils. I often do a meat based version and they freeze quite well. The trick is long roasting so the capsicum

    You could do a veggo shepherds pie, topped with a sweet potato/potato mash.

    I don't know about the roast veggies but we often make a whole head of cauliflower cheese, and freeze the leftovers.

    Ive just had baby #4 and my Mum came and filled our freezer for us. One thing she made was beautiful vege patties that are fantastic served with a salad or on a bread roll for a vege burger. They freeze really well too.

    Also spinach and fetta/ricotta cannelloni is yummy and freezes really well. My kids love it.
