What to do with HEAPS of left over sausages??

Our engagement party was a massive success - my heart is still smiling about it

We have 2 trays full of sausages left over - I want to use them to make something yummy for DFs lunches that I can freeze - but have no idea what to make LOL

    Any ideas would be awesome

Curried sausages! Yummo. Actually we cheat and put sausages in our stir fry. We also boil up pasta and mix through a can of crushed tomatoes and some chopped sausages with a few herbs and spices, also very nice.

Sausage casserole. Fry up some onion and garlic, put a few tins of tomatoes in and a bunch of cut up sausages. Good with either brown rice or mashed potato.

Or you could do something like a cottage pie with mashed potato/cheese on top and a similar tomatoey base underneath.

Or just freeze whole sausages and he can have sausage sandwiches for lunch.

    Congrats on your engagement.

I second the sausage casserole idea!

Also, I sometimes slice them into rings and freeze individual portions, which can then be added to leafy/vegetable salads to get some protein. One of my DPs favourite salad-as-a-meal lunches is sausage, cubed roasted sweet potato or pumpkin(also freezes well) and fresh baby spinach, with a little bit of dressing and a sprinkle of pepitas (pumpkin seeds).

Little rings of sausage are also good added to potato salads.

    Thanks again xx

Toad in the hole! Yummy! Probably not a good one for lunches, but good for dinner.

    Sausage Pasta bake,

Packet of pasta, 7 or 8 sausages, bottle of tomato pasta sauce, some mixed herbs. Mix together & put in baking dish, top with grated cheese & bake for 20 mins. This makes heaps & we often have enough for leftovers for lunch for 2 days for 2 people when we have this for dinner. Even DS eats this one.

Take your sausages put them in a dish with some sliced onion, smashed garlic, thyme and red wine. Cover with the wine and leave overnight. The next night when you are ready to fry or bbq them and serve with salad. The Sausages take on a whole different flavour. (pierce the sausages for more flavour)

    Some other ideas...

    Devilled sausages...

Take them out of their casings and make mini meatballs for stroganoff.

Wrap each sausage in sage leaves then in puff pastry and slice in half and bake for little sausage pockets. Serve with gravy, mashed potato and buttered peas.

Take all the sausages out of their casings, and combine with salt, sage powder, marjoram, ground cloves and pepper (if you want exact measurements let me know) and make into a large sausage and wrap in glad wrap and store in a big ziplock bag and you've got beef breakfast sausages. You can slice discs off to make individual patties for sausage and egg muffins.

Chop each sausage into bite sized pieces and wrap in bacon and skewer. Brush with BBQ sauce and bake for little bite sized appetisers.

Moroccan Sausage Casserole (using Moroccan spices and veg) serve with pilaf or cous cous.
