I've done hokkien noodles with beef a couple of times, and its gone down well. Its a weightwatchers one so you should be able to look it up on the app. There's also a beef in black bean one that I'm trying next week.

We just cook hokkien noodles, chicken, snow peas, carrots, baby corn and make a sauce with soy, oyster and sweet chilli sauce. Adjust sauce amounts depending on how spicy, salty etc you like it.

Cook noodles first, then remove from the wok. Cook chicken till browned, add sauces, then carrots and other 'hard' veggies. About a min or two before you're done add the softer veggies (I.e. snow peas). Mix back in noodles to re-warm and serve.

I like my veggies to have a small amount of crunch still.

My old bosses are Chinese and they used to make an awesome noodle stir fry, I still make it.

1 packet rice vermicelli (asian section of supermarket)
500gm chicken breast marinated in soy and garlic (or whatever soy based marinade you like) and sliced finely
1/4 of a medium cabbage chopped
    5 large spring onions, chopped
2 medium carrots grated (usually in food processor)

In a large pot, brown the chicken on high heat so it goes crispy, remove from pot.
Keep heat high and add about 1/4 cup olive oil. Add spring onions and carrot and stir fry for a couple of minutes.
Add chopped cabbage and keep stirring till all the cabbage starts to cook down (bout 5-10 minutes)
Fill a bowl up with boiling water at let the noodles sit for a few minutes, maybe 5. Then drain and soak in cold water. Drain again and then chop with scissors
Add the chicken back to the pan and the noodles and extra soy sauce and stir.

Done! It doesn't seem that tasty, but it delicious. I'm making it tonight
