My mum always used cottage cheese, milk, eggs and grated cheese instead of white sauce in lasagne. - no extra cooking required. Easy, healthy and yumo.
I bought a tub of creamed cottage cheese. Not quite sure why...Anyway, short of only having it on toast, what can I do with it?
I read through mr google about using it in lasagne "in place of ricotta cheese", except that I don't use ricotta in lasagne, so not sure on how to include it. I was thinking of cheese and spinach pastries, anyone got any good recipes? Also, can I freeze them? Before baking?
Ideas most appreciated! Would love to maybe being able to use this more often than just "trying to use up this one tub".
Many thanks.![]()

I can't help thinking of the places I'd use cream cheese - so...
As a spread on bagels, crackers or bread rolls with loads of salad and a sprinkly of s+p,
As a base for yummy dips - blend with roasted capsicums, s+p, or with tinned chickpeas, lemon juice, cumin and coriander, as a creamy version of hummous, with french onion soup mix, with garlic, onion powder, and a mix of fresh finely chopped herbs, or blended with tinned beetroot, or with sweet chili sauce poured over... Then eat with crackers or toast or crudites.
Add to rissole/meatloaf/meatball type mixes before cooking.
Add to creamy sauces instead of cream.
Dollop on tacos/burritos/quesadillas etc instead of sour cream
Mix with tinned tuna and a few herbs and make little parcels/rolls out of thin long strips of cucumber or zucchini.
Mix through the couscous or rice-based stuffings that you can use on stuffed peppers or mushrooms or zucchini or eggplant.
HTH!
