    Share Your regular family favorite recipe!

    I have been looking through all the cooking threads and everything looks wonderful but some are alot of effort!

    As I works nights I leave for work at 6.30pm and hubby doesn't get home till 5.30-6pm so I have to have dinner ready at that exact time 5 nights a week!

    I'm so tired I either just pop (brought) frozen meals in the oven or make the same meals over and over!

    So ATM we eat alot of Mexican, pasta, sausages n veg etc. so boring I know.

    I need quick meals that are not going to take tons of different ingredients but ate flavorful and vary a bit lol.

    I'm thinking of trying tuna, mash pot and sweet pot rissoles tomorrow night.

    So what is your easy, tasty and fave meal all the family eat.

    Oh and we are not soup people, boys just don't like it!

    Home made sausage rolls with pumpkin, feta & pine nut salad.... sounds like a lot but it's SUPER easy.

    Sausage Rolls.
    500g sausage mince
    1cup bread crumbs
    1 Large Carrot
    1/2 Zucchini
    1 Brown Onion
    2 cloves garlic crushed
    BBQ Sauce
    1 Egg
    3 Sheets Puff Pastry

    Grate the carrot & zucchini, mix into bowl with sausage mince, bread crumbs, diced onion & crushed garlic.
    Mix in BBQ sauce (i just squeeze a genrous amount in.

    Cut 3 Puff pastry sheet in half, form a log along 1 edge of each sheet, fold over and brush egg to stick pastry together.
    Cut in half or as small as you like, brush remaining egg over top of sausage rolls & sprinkle with poppy seeds (if you like) then pop in a hot oven and bake until golden brown

    Pumpkin, Pine Nut & Feta Salad.
    Baby Spinach
    Pumpkin (butternut is nice)
    2 Red Capsicum
    Pine Nuts
    Cucumber
    Lettuce
    Red Onion

    Dice pumpkin into squares, cut capsicum into thick strips and roast in oven while cooking your sausage rolls.
    Cut your red onion, lettuce, feta & cucumber and toss in a salad bowl with baby spinach.
    Once capsicum & pumpkin are cooked roasted (a little burnt is great) remove from the oven and allow to cool slightly.
    Roast some pine nuts for 3-5 minutes (watch them as they burn quickly) then throw all the hot ingredients into your salad.
    Splash with a little good quality olive oil, red wine vinegar and some salt.

    It sounds like a lot but it's really not, my girls LOVE this (they had it yesterday) and it's something they ask for quite a bit.
    You can add so many different things to the sausage rolls and lots of people change the recipe.

    We love smoked chicken pasta.
    Pan fry mushrooms, spring onions, smoked chook( the vacuum packed one from supermarket). When cooked add 2 cans evaporated lite milk and simmer to thicken. Season and serve with pasta and Parmesan. Yummo! It's our version of healthy carbonara.

    Btw, I never cook under a whole packet of pasta. We freeze the cooked pasta with a splash of olive oil. 1 less thing to do for dinner!
    We love this made up recipe because the chicken is long life as well as the evap milk. We usually have spring onions and mushrooms in the fridge and sometimes we add spinach too.
    It takes about 20 minutes to make :-)
