What to do with a fresh coconut over than eating as is?

Just cracked open a fresh coconut and we've eaten some as is but would really like to do something with what's left!

Yeah, I guess so. I'm not a fabulous cook but that's what I'd do.

I'd probably make a coconut and pineapple cake.

The BBC did a good educational video on things to do with coconuts. I'll see if I can find it.

I think it was an extra on Python's Holy Grail dvd. So horses were included as ideas.
