Sausage and eggplant casserole (SC)

I do a normal sausage casserole for the kiddies, but I dont like it much myself... SO gonna try this one!!!!

I have actually made this same recipe before. I loved it, the kids and DH were less impressed lol. Apparently I didn't chop the eggplant into small enough pieces - it was too "chunky" for them. For some reason they are happy to eat it when it is barely detectable though.
