Mmmm delicious soup, not sure i would use the whole kilo of bacon but pumpkin, sweet potato and bacone = YUM
Do you have chicken stock, maybe some carrots, zucchini, onions, herbs?
Personally i would roast the potato & pumpkin (and any other veg) then cook your bacon and add it INTO the dish before finishing, pour in some chicken stock and allow to reduce in the oven then take it out and blend it or have chunky soup.. it's delicious, thats how i make my pumpkin soup![]()
Sounds wonderful to me! You could add a couple of onions, if you had them on hand, and a sprinkle of nutmeg would go beautifully, too.
With a dollop pof sour cream and a few chives, it would be restaurant-quality!

Yummo definitely and you can freeze the bacon if you don't use it all into smaller portions.
No bacon! Certainly not a kilo of it.

You wouldn't need that much bacon, but that's pretty much the base for my pumpkin soup when i make it![]()

I do an awesome sweet potato soup with bacon and cumin. DD1 loves it, especially with a dollop of sour cream with some crispy bacon sprinkled on top.
Donna hay makes a really yummy pumpkin soup with all those ingredients. She uses two rashes
Of bacon, cut finely. Pumpkin, potato, onion, zucchini, chicken stock, cumin. Cooks it altogether when potato and pumkin is soft, blitz with milk and cream
