    banana cake

    I have 3 yucky banana getting worse every day sitting on my bench now I am cooking challanged so it will have to be S I M P L E...

    I am tring to fight my the urge to chuck them out... so if someone could please help me become a good mummy who cooks snacks that would be great.... All you great none jar cooks are starting to inspire me

    This is the best!!!!!

    This banana cake recipe is an example from Donna Hay's Modern Classics Book 2.

    Ingredients:
    125g (4 oz) butter, softened
    1 cup caster (superfine) sugar
    1/4 cup brown sugar
    3 eggs
    2 cups plain (all-purpose) flour
    2 teaspoons baking powder
    1 teaspoon ground cinnamon
    3/4 cup sour cream
    1 cup roughly mashed banana

    Method:
    Preheat the oven to 180?C. Place the butter, caster sugar and brown sugar in the bowl of an electric mixer and beat until light and creamy. Gradually add the eggs and beat well. Sift the flour and baking powder over the mixture. Add the cinnamon, sour cream and banana and stir to combine. Spoon the mixture into a greased 26cm (10 in) fluted ring tin. Bake for 40 minutes or until cooked when tested with a skewer. Cool on a wire rack and spread with caramel sauce.

    I don't do the caramel sauce, it's best with a cream cheese icing.
