banana muffin recipe please?

Does anyone have a banana muffin recipe? Hopefully an easy one!

Mine is dead easy and to die for I normally make with mini muffins:

1 1/2 C SR Flour
1 C Sugar
3 Ripe Bananas
4 Tbs Butter/Spread/Marg
4 Tbs Milk
1 Egg

Mix together, cook @ 180C for 15 to 20 mins less (about 8-10) for mini muffins

Freeze well too Great for school lunch boxes in 5 or so years LOL!

I only have 2 bananas though..what do you suggest?

Are they small or big? I have used 2 medium before. I think you can get away with it honestly Otherwise add a couple of tablespoons of apple sauce if you have it (although its not necessary)

OMG jelvie!!!!!!!! These have to be honestly the best tasting muffins ever! I put in the 2 bananas I had as I didnt have enough SR flour to make another batch.

And I used soy milk instead of normal milk as I didnt have any.

They are so light, fluffy and full of flavour!!

Shannon posted a banana cake recipe for me which i used to make muffins not that long ago which was really yummy! DH scoffed them all down

Forgot to mention too, my recipe is diabetic friendly all you do is substitute the sugar for splenda...
