This is our current favourite - DH loves the byron cookie company dottie cookies so we have been on a hunt for a similiar recipe. The coconut adds a nice texture. DD adds smarties on top as well for effect!

    best choc-chip cookies

    125g butter softened
    1/2 tsp vanilla extract
    1 cup brown sugar
    1 egg
    1 cup plain flour
    1 cup SR flour
    1 cup dessicated coconut
    250g chopped chocolate

place butter, vanilla and sugar into a bowl and beat until creamy. beat egg into mixture and then stir through flours, coconut and chocolate. roll 2 tbs of mixture at a time into balls, place balls on lined baking trays and flatten slightly. bake in a preheated 190C oven for 15 mins or until cookies are lightly browned (i take them out when they are turning slightly golden, even if they are still soft when you take them out, that's ok - it means they'll be really good and slightly chewy/not hard!) cool on trays. makes 20

S4U - Your baking threads have got me moving - need to hit the pavement now too as a result!!!!

    125g melted butter

Throw it all together....roll into balls, cook mod oven for 15-20 mins. Leave for 5-10mins afterwards to go hard...

Do you find these ones a bit difficult to roll? I just made them this morning because I wanted some cookies but had no eggs. I found them really dry & hard to roll into balls. I managed & they are in the oven, but just wondered if anyone else had the same problem?
Sorry, should have added that occasionally my mixture is a teensy bit dry so I add 1-2Tbsp water.
If you're watching your waistline swap the butter for low fat margerine, use 3/4 cup sugar and use big fat juicy raisins instead of chocolate and pecans.

Olive'smummy ... thank your Mum from me, geez her recipe is really nice ... If anyone is interested i baked 'em in the oven at 180 but should have at maybe 160 as they turned out a bit too hard for me (i like 'em with a bit chewy in the middle & not so very hard around the edge ... BUT that was my silly fault as i didn't get around to asking Olive'smummy the oven temp & my oven isn't the greatest so i usually put it up another 10degrees to recipes ). Also instead of choc chips i used 3/4 chopped chunks of cooking milk chocolate but next time would instead add 1 cup ... Will be making them again for sure

I discovered a cheap$ way to buy ' nice ' cooking chocolate (NOT yucky compound chocolate) Coles " you'll love " brand have a Cooking Chocolate (Dark or Milk) 200g net block for only ** $2.49 ** (cheaper than buying Nestle or Cadbury choc chips) ... and it's tastes YUMMO

    These are Nigella's choc-chip biscuits.

I don't really bake with chocolate much because I find it really hard to find free trade chocolate & cocoa for cooking

From Sunrise's Home Cook Hero segment

    225 soft butter
    1/2 cup raw sugar
    1/4 cup condensed milk
    2 cups sifted SR flour
    1/2 cup choc chips
1/2 cup other... I can't think of a word here, but she suggested jersey caramels, m&m's - you get the idea

Cream butter and raw sugar until fluffy.
Pour in condensed milk and blend.
Add in flour, mix. Add choc chips and other and mix
Get 1 tbs full, roll, place on tray. Flatten with fork. Into a 190'C preheated oven for 10-12 mins.

smiles4you - Sorry, silly me forgot to mention the oven temp It's just one of those family favorites that becomes second nature and you forget that others haven't made them a million times. I'll let mum know you liked them though.
I usually bake them at around 170 for 15-20 as I like them abit soft to but it just depends on your oven I think. I find that sometimes I have to cook things a couple of times to get them right with my oven.
    Happy baking

" Lisa's Choc Chip Cookies " ... are just YUMMO

    ThankU, ThankU, ThankU Lisa

Made them last night as i was going to a friends this arvo & everyone loved them

I had them in my oven on top shelf, gas oven at 190C for 13-14 mins & the middle was a touch chewy (just as i like it)

I added chopped (chunks) of Coles 'love it' 200gr milk chocolate cooking chocolate BUT it needed more choc chunks (about 50gr more ??), so will add more next time

Loved the slight taste of the condensed milk in it ... and the recipe makes heaps of the cookies & decent size

Note : Keep eye on the cookies in oven as they can turn brown very quickly which you don't want ... so therefore you can work out how many minutes to bake.

" Doudou (Ellissa) " is right they do taste a bit like the Subway cookies although mine didn't come out as flat.

Another tip take them out of the oven when still pale in colour like the Subway cookies, so NOT light brown in colour

You're welcome hun. I tweaked a recipe that I had to get those measurements and found it to be the best.
They're also really easy to make, my 12yr old DD loves to make them. I am so glad you liked them too

    Did this today YUMMY!!
Okay this may seem obvious - but DO NOT pour the melted butter on top of the choc chips - as did I!!! I now have chocolate oat cookies - but not chippy!
