Lol really? That would have been the last thing I'd have thought of!! Maybe I'm just weird, I never really liked the stuff even as a kidI'm so un-Ostrayan.
I've always been a mad sucker for a caramel tart, I'm pretty sure they're egg-free? My mum used to make little individual caramel tarts involving gingernut biscuits (I'm not sure if you would be able to use different ones, I think maybe Choc Ripples or something with that sort of texture might work if you aren't a fan of gingernut??)...
You get a muffin/cupcake pan, pop a gingernut upside-down into each circle, then pop them in a 180C oven for a few minutes. They soften and buckle in the middle a bit, ending up in a cup-like shape, then when they're cooled and hard you just spoon a dollop of caramel (I prefer made from scratch, you could use tinned if you're short on time and it's suitable) into the biscuit, then finish with a blob of whipped cream, and viola! If you wanted to be really fancy, you can spread a bit of melted chocolate over the caramel to 'seal' them before you add the cream, they end up a bit like gigantic Pods (and OMG I loooovvve those things).
They're really fast and easy, and pretty impressive - and the best thing is they're essentially finger food, just stack 'em on a plate and everyone can help themselves with no mess!!
