This is my own adapted recipe WOOT! The original had praline topping as well as other things so I'll include recipes for both toppings
INGREDIENTS:
1 1/2 cups SR flour, sifted
1/2 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/4 unsalted butter softened (or salted butter but minus the salt)
1 large egg, slightly beaten
1/2 cup milk
1 cup chopped tinned pie apples apples

Crumble Topping:
1/4 cup brown sugar
1/4 cup butter
1/2 teaspoon ground cinnamon
3-4 Tablespoons plain flour
Alternate Praline Topping:
1/4 cup brown sugar
1/4 cup chopped pecans
1/2 teaspoon ground cinnamon
PREPARATION:
Sift together flour, sugar, baking powder, salt and cinnamon into mixing bowl. Rub butter into dry ingredients until fine crumbs form. Combine egg and milk. Add to dry ingredients all at once, stirring just enough to moisten.
Stir in apples. Spoon batter into muffin tins (I use my clicky ice cream scoop), filling each about 2/3 full. Sprinkle with crunchy topping. Bake in 375° F, 190° C or 170° C fan forced. oven for 25 minutes or until golden brown (takes me about 20).
Crumble Topping: In a small bowl mix together flour, sugar and cinnamon. Add butter and rub together till crumble forms (should be a cross between crumbs and biscuit dough)
Praline Topping: In a small bowl, mix together brown sugar, chopped pecans and ground cinnamon.
Makes about 12 muffins.
We have these for BreakfastAs on weekends we have one sweet cooked breaky day and one savoury... tomorrow is all-in-one breakfast (I'll post that recipe too!)

quick question Cailin, you have mix in the baking powder listed but no quantity... i have just made these and my mum said put 1/2 teaspoon.. what is the exact amount please? and do they normally rise alot, mine havent seemed to.....

Oh sorry! I didn't use baking powder as I substituted the original recipe to use SR flour! Mine rose slightly but not heaps. I think I filled the muffin tray 2/3 of a way up? If you want to add 1/2 tsp of baking powder go for it it certainly won't hurt. Make sure you don't over mix too or they will be dense.
Hmmm all-in-one breakfast muffin... don't think so... remind me...

I made these muffins today and they are FANTASTIC. I love apple crumble, so this is certainley a great way to do it.

I had one of these at Ali's the other week and had to make some. I couldn't find my muffin trays so i made them like cup cakes and made 22 of them. 20 mins out of the oven and they are all gone.
Cailin, how much for the butter? I can see 1/4, but didn't know if you meant cup or not?

I made these following the recipe once and then I deviated a bit and chucked some fine cut walnuts in and made it into a walnut and apple bread.
I'm thinking of sneaking some rolled oats in too but I'm not sure what to use to boost the moisture. Maybe a bit of extra milk and butter - wdyt?
I think definitely add a bit more milk otherwise you could add some apple sauce as well.
