I promised my bellybuddies this one so thought i would share with all.. its super duper yummy but super duper naughty !
Filling
250g Cream cheese
half cup caster sugar
2 eggs seperated
1 teaspoon vanilla
3 teaspoon gelatine
2 tablespoon cold water
3 mint crisp bars (or you can use that new dove mint one with chips and cream)
100g choc bits
300ml Whipped cream
Beat cream cheese until smooth , gradually add half of sugar and egg yolks and vanilla. Beat well.
Soak the gelatine in water and disolve the the chocolates over hot water (or microwave)
Beat egg whites until firm peaks form, then gradually add rest of sugar.
Add the chocolate mixture to cream cheese mixture and mix well.
Fold in egg whites and then the cream.
pour mixture into crumb crust and chill.
Sooo yummy !!
A bit messy and uses way too many bowls for my liking but well worth the effort .
Thanks Jane!!! *hugs* Do you think I could substitute the raw egg with something else?? Otherwise, I'll have to wait 3 months to make it, but will definitely print it out for my recipe folder!
