I make 1 egg, 3/4 cup flour, 1/2 - 3/4 cup milk. I've never used sugar.
Back in the day, I used to make "Double pancakes" and it was the easiest recipe in the world ...
It was something like,
- 2 cups flour
- 2 cups sugar
- 2 cups milk
- 2 eggs
- 2 minutes whisking
And then cook them up ...
But I can't find a recipe even remotely like that! DH just buys those "shake'n'bake" things which I reckon are a complete rip off and full of all sorts of unnecessary nasties, so I'd planned on mixing together some flour and and sugar and putting it into a tub with a label, like:
- 2 cups mix
- 1 egg
- 1 cup milk
- mix, cook, eat!
But I was unable to find a recipe close enough ... am I misremembering, or did I just make them wrong for all those years??

2 eggs
Mix flour and eggs then add milk gradually.
I use plain flour because I prefer crepe style pancakes but you can use sr if you like them fluffy
I've just made today Strawberry Pikelets and I didn't use a recipe at all just went by 'feel'
Consisted of
Self Raising Flour
Caster Sugar
2 or 3 eggs depending on how big a batch
Milk
1 or 2 pouches of the kids strawberry puree depending on how much you want to make
Just mixed it all together to get the right consistency and then cooked. Must have been good though as my DD ate them (she only eats shop bought pikelets)
I think I ended up with almost 40 pikelets today.
I don't use a recipe either. I just use self raising flour, milk, 1 egg and whisk, i like thick pancakes so you just add more milk until you get the desired consistency. I don't add sugar for the kids I mash a banana and put that in.
170gms self raising flour
20gms sugar
1 cup buttermilk/milk (sometimes its less liquid, but a cup is a safe bet)
1 egg.
Add all then adjust until mixture is consistency that I want.
Yeah we do the 1:1:1 ratio too. I cup sr flour, 1 egg and 1 cup milk and beat until smooth.
Double or triple it easily for more.
Makes foolproof pancakes.
I often add yogurt instead of milk for pikelets, or berries to jazz it up.
My pancake recipe is a lot more detailed...
Boil kettle. In bowl mix about a tbsp of sugar and a decent knob of butter. Pour boiling water on top. About that muchuntil just under the level of the bowl where you want the mix to end up. Let sugar and butter melt. Add a splash of milk. Stir in 1 egg. Or 2 if its a big bowl. Add flour until desired consistency.
Yep 1:1:1 here too. 1 cup flour, 1 cup milk, 1 egg. For the flour I normally do half half - half a cup of SR, half a cup of plain. Fluffy without being OTT.
Sugar in pancakes is unnecessary, IMHO![]()
I make crepes with a dollop of melted butter, 1 beaten egg, flour and milk - it needs to be about the consistency of thick cream or a tiny bit runnier.
For extra yumminess I add a few drops of vanilla. So much nicer.
I don't really use specific quantities - just judge it by eye each time.
Let it sit. I can't emphasise that enough. It means that each bit of flour can puff up and your crepes will be lighter and fluffier. I like to make it the night before so it's ready when I get up in the morning. Saturday night for Sunday brunch. It settles overnight but a quick stir brings it all back together.
My Mum used to put a bit of self-raising flour in but her pancakes were more pancakey and less crepey.
I've never used sugar.

I just chuck some flour in a bowl with some milk and mix it til its the right consistancy. I guess first, then add a little of one or the other depending on how runny it is.
Df wont eat eggs unless they are in a cake or something so we rarely have them in the house.
I usually add some honey or some kind of mashed or finely chopped fruit (apple/pear/banana/something) for sweetness.
Always cooked in butter.
Always come out pretty good :shrug:
Maybe the sugar is for the quick cookies ... that was something like 1 cup flour, 1 cup coconut, 1 cup sugar, 1 egg ... oven on 180 for 5 minutes ... something like that...
We have pancakes pretty much every Sunday.
100g of flour - have always plain but might try sr just to see if its different after comments here

I always make batter on the day but after reading comments can remember being told as a kid that you were better off leaving the batter to rest. Pancake Tuesday my Mum would make the batter Monday! Can't remember why though.
I always use butter in the plan though never oil.
Embarassing fact - for years I assume that making nice pancakes was like really hard so bought the shake'n'bake mixtures then worked out wasn't hardand had to use one of the mixtures recently when we didn't have a kitchen and couldn't believe just how sweet they were! Pancakes are seriously seriously yummy and you get to eat fresh fruit with them too so double goodiness

I also do the one cup each of flour and milk plus one egg. It's not the best but it's enough for the kids![]()

2 Tbsp Sugar
1 Tbsp Oil
1 egg
3/4 Cup Milk
1 tsp Vanilla
Light fluffy, thick. Very much like pancake parlour or any American style pancake. Even better with buttermilk and even better if the batter is left overnight.
Yep, it's 1:1:1 here too. 1/2 and 1/2 SR whole meal flour and white SR flour, and a mashed banana when DS isn't looking. A little vanilla and/or cinnamon are awesome too but not essential.
For thin pancakes, I add more milk and maybe a dollop of melted butter. Let it sit a bit if I can.
