    Easy wedding cake recipe

    If there is an easy one.....

    I decided I would be nice and help my friend out with her wedding (as her DF was let go from him job a few months before the wedding) and bake/decorate the cake.
    So she sent me a picture of the cake/cupcakes she liked. So I did a trial and she didn't like them.
    So the wedding is this Sat and I have to start making the cake today.
    Has anyone got an easy, if not easy delicious recipe for a chocolate mud cake.

    I do not have much money myself and don't want to go out and spend a fortune on everything.
    It has already cost me $70 so far just for the cake stand, cup cake wrappers,decorations and still haven't even got the frosting yet.
    So any advice on budget cake ingredients/frosting?

    Better yet anyone in Brissy wanna make the cake Well I just had to try didn't I

    here is the one I use for my wedding cakes

    200g butter chopped
    100g good quality dark cooking chocolate chopped
    60mls water
    30g (1/4 cup) cocoa powder sifted
    2 tbs espresso coffee powder
    1 tsp vanilla essence
    220g (1 cup) caster sugar
    3 eggs room temperature
    115g (3/4 cup) self raising flour sifted

    1. Preheat oven to 160 celcius
    2. combine butter, chocolate, water, cocoa, coffee and vanilla in a medium saucepan. Cook, whisking constantly over low heat for 6-8 minutes or until smooth and well combined. Remove from heat and stand for 10minutes or until mixture is lukewarm.
    3. whisk sugar and eggs in a large mixing bowl until pale and creamy. whisk in the chocolate mixture until well combined. Add the flour and whisk until combined.
    4. cook in pre heated oven for 55 minutes - will be less if making cupcakes.
