    I've never had that problem, it usually turns out perfect every time. It could be the egg size like Lime said or even the humidity, sometimes flour needs a touch more liquid when the weather is hot. I'm glad you liked them. They're a favourite here too.

    I did use extra large eggs but it has been hot down here today so maybe it was the weather
    They came out yummy but I will try again and hope for a better mix

    I freeze this recipe. I usually divide the mix into 2 or 3 portions and then they make about 6-10 biscuits.

    Chewy Chocolate Chip Biscuits
    125gm butter
    1/3 cup sugar
    1/3 cup brown sugar
    1 tsp vanilla
    1 egg
    2/3 cup SR flour
    1 cup plain flour
    200gm chocolate chips

    Cream butter, sugar and vanilla
    Add egg
    Add flour
    Add chocolate chips
    Combine well after each addition
    Spoon teaspoon sized blobs onto lined babking tray
    Bake 13-15 mins at 200C, till just brown.
    They should be too soft to remove from the tray until cooled- overcooking makes them crunchy, not chewy.

    Just made a few more batches of these: A peach, strawberry & sultan using chopped dried fruit and soaked sultanas, the choc choc chip and a peach choc chip for hubby


    Turned out super!
