Yesterday, i was googling what to make with some forlorn looking mangoes in the fridge, and came across this recipe, i tried it last night, and it tastes amazing!! almost identical to a Weiss bar! and its so simple too!
I just replaced the tinned mangoes with 4 fresh mangoes (though i think you can use 3 depending on weight?)
1 1/4 cups sugar
1 1/4 water
3 x 425g cans sliced mangos drained (or fresh)
1 tblsp lemon juice
1 x 300ml thickened cream
Method:
Combine sugar and water in a saucepan, stir over low heat until sugar is dissolved. Bring to the boil and boil for about 5 mins or until syrup thickens slightly, cool to room temperature.
Blend or process mangos, syrup and juice until smooth. Combine 1 cup of mango mixture with the cream. Line a 20cm x 30cm lamington pan with foil and pour cream mixture into pan. Freeze until firm.
Pour remaining mango mixture over frozen mango cream in pan. Freeze for several hours or until firm. Cut into slices when frozen and store in freezer.
Yummo!!!
And for all those health conscious people out there (myself included) when cut into 16 slices, it only equals 150 calories per slice!! Yummo!!

I dare to say "yum!", even though I dislike mangoes. A lot. But I will be jotting this recipe down to use with other fruit. Primarily strawberries.

I made this the other day, with less than half the sugar. It was still super sweet! I think I'll skip the sugar altogether next time. It was divine though.
I made this recipe and we had it with frozen berries for dessert on Christmas Day. It was so yummy and refreshing and not too heavy after all the gorging we'd done on nibbles and mains!
