I made it last night but it was still slightly liquidy after a 2-3 hours in the fridge. I guess i did not leave it to heat long enough. I will re-heat it and try again tonight. I added some condensed milk too, because the caramel was too rich. The taste is to die for though!

How long before christmas can you make this if you're planning on giving them away? Do you have to keep them in the fridge if it's hot or do they hold together ok? Could I package it into cellophane bags and if so, would I need to put it in pieces or just as a (scored) slab?
I'd say it would keep in the fridge a week so I'd do it a few days before. I tend to make it in a plastic flat container lined with go between. I have one of the slice containers from Tupperware and it works perfectly because it has a lid. I would slice it before cellophane. Also nigella has an awesome fudge recipe that is just as easy with pistachio.
How long does it take to set in the fridge? Shops are all closed tonight and I want to make them for my Kris Kringle tomorrow at lunch time. If I made them at 8am would they be done by 12? Help please!!
I would say they would definitely set.
I just made some for DH's christmas morning tea tomorrow, with christmas M&M's and gold cachous. Looks very christmassy.
My advice is to make it in the microwave because it won't get as hot as on the stove top and you can chuck all the ingredients in at once. We didn't have any vanilla so I added a tsp of instant coffee to the condensed milk and nuked that together and beat it in. Also don't fret if it looks like it's not going to combine as you just stir it really well with a wooden spoon and it will. I did 30 second bursts and stirred each time.

I was wondering how I should decorate it! What are Christmas M&M's? :hide: Do you just put them on top before it sets? Or do you wait until it is set, then cut it and then decorate the individual pieces?
I was thinking about roasting some crushed nuts (almonds or peanuts) and then adding those on top. But I'm not sure yet :D I need inspiration!!

Christmas m&m's are out at the moment they are green and red only. I just poured a whole heap in and stirred them into the fudge, then I decorated the top by organising them in a pattern and sprinkled the top with cachous. I pushed them in so they set in the fudge, as the fudge is like playdough when it sets so it can be hard to get stuff to stick to it.

It will definitely be set. I just cut mine up about 15 mins ago and I probably made it at about 3 hours ago.
well Rouge, your fudge has given me another bit of leverage to DH as to why I need a kitchen & hotplates....
Oh Rouge, you're a star! BTW, your fudge looks amazing. I think I went a bit overboard with the decoration... :rofl: Still looks nice though. I couldn't find golden cachous in the local shops, so I used silver instead. It's soo pretty! :D
Well, it's in the fridge now. I hope I did it right. How long do you normally leave it on the stove for? Just until everything is combined? I wasn't sure, and I didn't want to burn the chocolate either. It kind of 'came away' from the sides of the pot. Is that right? Ahhh I'm scared!!! :o No time to make a new batch so this one will have to do!
Oh, and when I went shopping I had some great ideas for when I make the fudge for just DP and I... like using Chilli chocolate... I reckon that would be wicked. Or I saw some toasted coconut chocolate... I reckon that would be super nice too. Gotta love experimenting! ;)
is it normal chocolate or cooking chocolate?
