    Here is my pikelet recipe, DD loves them and loves to help make them too.

    1 cup wholemeal self raising flour
    1 tbsp sugar
    1 egg
    2/3 cup milk

    Then can add: 1 mashed banana
    Grated apple
    Sultanas
    Grated carrot, grated zucchini
    Cheese
    Berries
    The list is endless!

    You can leave out the sugar if you want too, especially if you are adding fruit to the mix which is sweet anyway.

    I found this on there and I am going to give it a shot this weekend

    Apricot Museli bars
    Recipe Ingredients
    (serves 24)

    * 3/4 cup chopped dried apricots
    * 1/2 cup water
    * 150 g butter
    * 3/4 cup brown sugar
    * 1 1/4 cups self raising flour
    * 1 cup UNCLE TOBYS ROLLED OATS
    * 1 cup NESTLÉ White CHOC BITS

    How to Make

    1. Preheat oven to 180°C. Line an 18cm x 28cm baking tin with baking paper.

    2. Place apricots and water in a saucepan, bring to the boil then simmer until liquid has been absorbed. Remove from heat and stir in butter and brown sugar. Cool slightly.

    3. Sift flour into a bowl. Stir in apricot mixture, UNCLE TOBY’S Rolled Oats and NESTLE White CHOC BITS.

    4. Press into prepared tin. Bake for 30-35 minutes until golden.

    5. Stand 10 minutes before cooling on a rack. When cold, cut into bars.
