    Mud cake advice

    I'm wanting to make a banana lolly mud cake. I've seen recipes where the lolly is in the cake in chunks but I want to be able to get it down to a powder-like consistency and blend it into the cake for flavour.

    Do I simply add it then to a mud cake recipe? Or do I need to substitute it?

    You may be better off finding some banana essence or Culinary Crystals and using those, if you want the flavour but not the actual pieces of lolly...
    That way you need not alter the mud recipe, but simply add the flavour.

    Yeah. Those lollies are made from a meringue type mixture so it would be like folding through extra sugar and powdered egg if you processed them. So it would change the texture of the cake. Unfortunately baking is pretty much a science so you really need to know what you are doing to change a recipe in that way.

    Last nights master chef ep was a Lolly layered cake. It might be worth checking out the recipe for the techniques that were used.
