    Needing your best recipes for biscuits please!

    This month is Baking Biscuit Month.

    Please hit me up with your all time favourite biscuit recipes!

    I am particularly interested in:-

    1. a magical macaroon recipe which is easy and works perfectly everytime ...

    2. those coconut-y jam drops

    3. jaffa-y choc orange cookies

    4. melting moments / yoys

    5. something healthy which I can guiltless-ly let DS nom on.


    And feel free to say any others!!

    Any that aren't too tricky - I considered myself a nifty little cook before Masterchef and My Kitchen Rules changed the parameters so badly!

    Vanilla Macarons

    350g icing sugar (the real stuff, not icing sugar mix)
    180g ground almonds
    6 egg whites
    90g caster sugar

    Preheat oven to 140c

    1. Sieve icing sugar, then combine with ground almonds in mixing bowl
    2. Beat the egg whites in a separate bowl until soft peaks form and then add the sugar very slowly to form the meringue
    3. Mix a third of the ground almond mix in using a spatula. Once combined stir in the remaining mix but try not to beat out too much air. The shinier the mixture stays, the better the macaron will taste and hold its shape.
    4. Place teaspoon sized drops of mixture 4cm apart on a baking tray lined with paper. Flatten very slightly with the back of the spoon. Set aside to rest in a dry (moisture free, so not near the kettle etc) part of the kitchen.
    5. Bake for 20 minutes, allowing to cool after on tray



    Butter cream
    300g butter
    100g icing sugar
    1 vanilla bean, deseeded

    Beat ingredients together until pale. Sandwich the macarons together with the butter cream just before serving.


    The best thing tip I've ever been told for perfect macarons is to rest them for as long as you can before baking. Recipes all say anywhere from 10 to 30 minutes, but if you can rest them for two hours then that's brilliant.

    You can freeze them once they're done.

    You can experiment around with flavours a bit. I've used this base recipe for pistachio ones, raspberry etc. Keep the ratios the same in the butter cream but leave out the vanilla bean (or not, depending on what you like) and just add whatever bits of flavour you like. If you can get the crushed dried raspberries from speciality stores the flavour kick is amazing.

    You get better results if you pipe the mixture onto the tray, rather than just dropping lumps on. It takes a bit of practice to get the shape right so that you're not creating a million boobs!

    This is my secret (ok I got it from a magazine in 2003 LOL) recipe for OMG cookies. They are certainly not guilt free. Quite the opposite. But woah, yummy.

    Makes 65 (you can halve it or freeze the rest.)

    500g butter
    1 1/2 cups caaster sugar
    2 teaspoons vanilla extract,
    395g can of condensed milk
    5 cups self raising flour
    3 x 250g packets choc bits (You can substitute any kind of chocolate you like here, and vary the qty if you like. I used a 'coconut slab' once all chopped up and it was to die for...)

    Preheat oven to 180
    Grease and line baking trays.
    Using electric mixer, cream butter sugar and vanilla until light and fluffy. Add condensed milk, while beating. (try not to eat the raw mixture or you'll have no cookies left )
    Transfer to a large bowl.
    Add flour anc choc bits to butter mixture. Mix with a wooden spoon untill well combined.

    And you know the rest. roll them up in little balls, press with a fork if you like and bake for 18-20 mins. I found the smaller the biscuit, the faster the cooking time, for obvious reasons. I tend to use a teaspoon to make little bite sized balls, and cook for about 8-10 mins. Keep close watch if you want them squishy instead of crunchy. Both are good though.

    Warning: Anyone who tastes these biscuits will be banging down your door for more. Only give them to people you want to see again

    These are my reasonably healthy, DS-can-munch-on, Anzac bikkies. DS even helps make them! We keep them in the freezer...

    Mix:
    1 cup rolled oats
    1 cup flour (or spelt flour or wholemeal flour, or a mixture)
    Just under 1/3 cup brown sugar
    1/2 cup desiccated coconut

    Melt:
    1 1/2 Tbs golden syrup
    1 Tbs butter
    then stir in 3 Tbs oil

    Combine:
    1 1/2 tsp bi-carb soda
    2 Tbs boiling water

    Stir everything together (sometimes I need to add a little extra hot water, oil or butter, depending on how healthy I feel!). Put heaped teaspoonfuls onto baking paper, press down a little and bake at 160 degrees for 12-18 mins (depending on how crunchy you like them - DS and I prefer them softer rather than crunchier!).

    From the biscuits and slices thread....


    Jam drops would be great:

    2 cups pl flour
    3/4 cup sugar
    125g butter
    2 level teas baking soda
    2 eggs
    jam

    Cream butter and sugar, add eggs one at a time, beating well. Add sifted flour, baking powder. Mix well. Roll into small balls and press a indent in middle. Fill with jam and bake in moderate oven for about 15 mins.

    You can pretty well use this plain mixture and add in extras for variety biscuits:

    Add in 1 cup sultanas and roll in cornflakes for cornflake bikkies
    Add in choc chips
    Add in peanuts
    Add in 1/2 cup coconut for coconut bikkies
    Put a lolly/freckle on top of each one

    This is one recipe for Snickerdoodles, using American measures. The original recipe called for shortening instead of butter, so you can use Copha. Apparently you should chill the mix for 15min -2 hours before baking, depending on recipes. I didn't and they came out fine. I made them in the TMX and it was really easy. Mine were a bit big, so didn't make 24. Warning: they are addictive

    1 cup butter
    1 ½ cups sugar
    2 large eggs
    2 ¾ cups flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    ¼ teaspoon salt

    3 tablespoons sugar
    3 teaspoons cinnamon

    Directions:

    1 Preheat oven to 350°F.
    2 Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl.
    3 Combine flour, cream of tartar, baking soda and salt in a separate bowl.
    4 Blend dry ingredients into butter mixture.
    5 Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge.
    6 Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
    7 Scoop 1 inch globs of dough into the sugar/ cinnamon mixture.
    8 Coat by gently rolling balls of dough in the sugar mixture.
    9 Place on chilled ungreased cookie sheet, and bake 10 minutes.
    10 Remove from pan immediately and cool on wire rack.

    11 eat them like you're the Cookie Monster

    They come out crispy on the outside and soft in the middle. They are fabulous with a cup of coffee.
