Here's the recipe!! (sorry for the delay!):

    Ingredients:
    55g butter
2 1/2 cups Self Raising Flour
    2tbs sugar
    1/2 cup pepitas
3/4 cup cooked mashed pumpkin, cooled
3/4 cup milk, extra milk and extra pepitas

    Method:
    1. Preheat oven 180c. Grease and line a baking tray.
    2. Using fingertips, rub butter into the flour. Stir through sugar and pepitas.
    3. Combine pumpkin and milk and mix into flour mixture until just combined.
    4. Pat dough into a 2cm thick round. Using a 5cm (diameter) round cutter, cut out 12 rounds. Place on tray and brush the top of each scone with extra milk and sprinkle extra pepitas on top
    5. Bake for 12 minutes or until golden. Place on wire rack to cool.

EAT & ENJOY!!! Super yummy and low in sugar!

Ok I think I did something wrong - followed recipe - put in a tinsy bit more milk than was meant to but it was SO sticky and wet I had to add about another 1/2 cup of flour. Made 24 plus 4 massive big ones at the end! THey were small too and didn't seem to rise much but very tasty and kids LOVED them so all good in the end!!

Hope this works - HERE is a photo - do they look right?!?! They are sitting on a bread plate.

Yeah they look similar to mine although mine were normal sized scones and had a few more pepitas on top!

I found the first time I made them I put too much pumpkin in and didn't measure properly and I ended up with your problem too where I had to add heaps more flour in the rolling out stage with the dough.

Made them again two days ago and I added a bit more flour at the end but not as much as before. I must be getting pretty good at it now

Glad you made them!! I like that they don't have much sugar in them.

I feel like making lemonade scones today but no lemonade.... wahhhh

I'm just glad they weren't like rocks My normal scones aren't ever any good and turn out like rock cakes! Ridiculous!! Ok I probably didn't measure the pumkin very accurately either! The kids weren't convinced by the pepitas so I didn't put too many on top!! Yummo though thanks hun!

I made more this afternoon they are ridiculously yummy and less fattening than a chocolate scone. Well that's how I justify it anyway
