    Talking Pancake recipe needed by a Turk

    I cook wog food, so anything non-Turkish is a blur to me

    I need a tried and tested **fluffy** pancake recipe. Mine turn out to be crepes, but i want the fluffy type.

    I not sure about 'fluffy', but mine do rise, I use self raising (or plain + baking powder) flour (+ 1 or 2 eggs, milk, vanilla, and a little bit of caster sugar).

    Do you use plain flour or self raising?

    This is a made up recipie, as in I make it up in the morning as I am only half awake...

    1 egg, about 1 cup of SR flour, about a table spoon of caster sugar then add milk til it is runny but thick. pour into a hot pan, when the bubbles form, flip over and cook the other side.

    I do this very early in the morning for lumpy when she wants pancakes and it has so far been fool proof for me

    That's basically the recipe I use except I use plain flour. I like to be able to roll the pancakes up.

    This is my recipie:
    2 cups SR flour
    2 cups milk
    2 eggs (separated)
    2 TS sugar

    Whip 2 egg whites until light and fluffy.
    Mix flour, sugar, milk and egg yolks together until smooth and creamy. Gently fold in egg whites.
    Add mixture to pan like normal

    Turns our VERY light and fluffy! DH LOVES them can't get enough. I sometimes add banana or choc chips to them too. MMMM

    buy a 600ml box of butter milk and it has the bestest recipe ever on there, they are sooo fluffy and tasty and don't last 5 minutes in this place LOL..
    I think off the top of my head its

    1 and 1/2 cups of SR flour
    1 egg
    1 tbsp melted butter
    3 tbsp's castor sugar
    finely grated orange rind - about 1 tbsp
    375 ml butter milk

    Just throw it all in a bowl and mix...

    mmm pancakes, got a friend coming this morn and asked her to grab some pancakes and fruit for a breaky together... were cheating today though and using the pre-made ones but i will def be trying some of these...

    Ohhh hurry up girl now i want my pancakes

    The ones using buttermilk are the best! they are the closest to "pancake parlour" ones i have made.
