Made Jitterbug's recipe today and they're pretty yum! Wonder what they'd be like with a bit more passionfruit pulp, might try that next time. I love passionfruit. Will have to try the other recipe when I have some OJ and yoghurt in the house.![]()
Can I give a tip? Sieve the pulp, and also if you can make cream cheese icing instead of butter icing with full pulp in them! And don't forget you can also use passionfruit curd or lemon curd as filling![]()
I decided not to go icing, because icing and my boys, ohhh mercy. We only have icing sometimes. I just dusted them with icing sugar. Why do you say to sieve the pulp? So you don't include the seeds?
INGREDIENTS
250g butter, softened
200g caster sugar
4 eggs
400g flour
½ tsp baking powder
½ cup milk
3 tbsp passionfruit pulp
Icing
150g softened unsalted butter
500g icing sugar, sifted
1/3 cup passionfruit pulp
Yellow food colouring
1 tbsp milk
Equipment
2 mixing bowls
Electric beater
Sifter
24 patty cake cups
2 baking trays
Dessert spoon
Wooden or metal skewer
Piping bag
METHOD
Preheat oven to 180°C (160°C fan).
Place butter and sugar in bowl and beat together until soft and fluffy. Add eggs, one at a time, beating well after each addition.
Sift in flour and baking powder. Beat until well combined. Add passionfruit pulp.
Arrange 24 patty cake cups on two baking trays. Spoon heaped dessert spoonfuls of batter into cake cups. Bake for 20 to 30 minutes, or until skewer is inserted in cupcake and comes out clean. Let cool.
Meanwhile, make icing In bowl combine butter and icing sugar and beat until smooth. Add remaining ingredients and mix well.
Pipe icing on cool cupcakes.
