I don't worry about making them from scratch, I use white wings butter cake mix and it makes a perfect rainbow cake every time. I know a lot of others who do them use the black and gold/no name packets and they use a packet for each layer and it saves the hassle of measuring and weighing cake batter so you get each layer exactly the same size.
