    Yeddi, I think that would be delicious!

    We had two cupcakes left in the fridge (don't ask me how that happened), and I made more last night. The two are incomparable! The fresh ones (yes I know, duh!) were so soft. Served not quite warm with the cream icing.... Mmmmm..... And oh! Look at that... I have six little cupcakes sitting on my desk. Oh, hang on, make that only five.

    You are able to bake in the middle of moving house???? Wow, you are so together Netix. I am like a robotic headless chook (inbetween panic attacks) when packing up to leave. You are amazing.

    Oh I have seen you postingabout red velvet cake Netix butneverknew there was a recipe on here for it. I am sold! I am going to make a trial of this cake in a few weeks and then make it for my friends baby shower.

    To cook the day before, would you be better storing it in the fridge or leaving it to sit in an air tight container on a bench?

    Netix, this cake is FREAKING AWSOME!!
    i lost the orgional copy i printed of this, the other one i found just did not measure up...... so i broke my "not going on bb" promise to myself so i can gety the best damned red velvet recipie EVER!!!

    I made these yesterday, and oh my gosh! The cupcakes are amazing! Very much in love with them and now just looking for a special occasion to make them for lol. As for the icing though, I failed The butter just never really got fluffy, and the flour mixture was a bit blurgh. So when they were put together the icing never got properly thick, never made peaks. I think it was because I used skim milk & low fat/low salt butter. So going to have another go soon with 'real' milk and butter. Can't wait!
