And now I have to cook scones today!!
And now I have to cook scones today!!
Does everyone use a butter knife to mix the mixture? I have no idea why they work better that way but they do.
I've pretty much given up on scones. DH always complains that they don't reach the high standards set by the 80 year old neighbour who used to feed him when he was at uni because she felt sorry for him.
YES! It stops you from over mixing.
The masterchef recipe including an egg:
Date and lemon scones
Ingredients
150ml-175ml milk
150ml cream
1egg
3 cups self-raising flour
2 tbs caster sugar
1 cup chopped, dried dates
Finely grated rind 1 lemon
Cream & jam, to serve
Method
Preheat oven 200°C fan forced. Line large flat oven tray with baking paper.
Whisk 150ml milk, cream and egg together until well combined.
Combine flour, sugar, dates and lemon rind in a large bowl.
Add milk mixture and stir gently to a soft dough, adding remaining milk if necessary.
Turn onto a lightly floured surface and knead gently until dough comes together.
Press dough out to 2cm-thick.
Cut scones from dough and place onto tray flat-side up.
Press dough together gently and repeat using the remaining dough.
Brush the tops with milk and sprinkle with a little sugar.
Bake 12-15 minutes until golden and well risen.
Serve hot with jam and cream.
LOL thanks.
I omit the lemon and date![]()
Another question then: who like savoury scones? DH was unfamiliar with the concept and doesn't like them. I love them. Cheese and herb scones are yummy. Obviously, not made with lemonade.
I love pumpkin scones but that's about it. Not really a fan of savoury scones.
Blue cheese scones with smoked salmon ....mmmmmmm
Ohhhh FRUIT SCONES... I HATE THEM!
Anything with dried shrivelled sultanas is NOT ok with me. Ew. Ew. Ew.
The reason NZ scones are square: because in NZ, the cooking bible is the Edmonds Cookery Book. It used to be sent free when a couple got engaged. One of the best marketing tactics ever, IMO, as the next generation (like me) also buy it.
Anyhoo, here's the Edmonds recipe:
3 cups plain flour
6 teaspoons baking powder
1/4 teaspoon salt
75 g butter
1 -1 1/2 cup milk
extra milk
Directions:
1 Sift flour, baking powder and salt into a bowl.
2 Cut butter in until it resembles fine breadcrumbs.
3 Add milk and mix quickly with a knife to a soft dough.
4 Knead a few times.
5 Lightly dust an oven tray with flour.
6 Press scone dough out onto this.
7 Cut into 12 even-sized pieces.
8 Leave a 2 cm space between scones.
9 Brush tops with milk.
10 Bake at 220C for 10 minutes or until golden brown.
Tip: Cooling on a rack will give you crisp crusts, while covering them with a clean tea towel will give a soft scone.
Square all the way! I am too lazy to cut out the round and then have to reroll the scraps. Yes, I know it is not much work, but I am really really lazy.
And I put mine about 1cm apart so that when they rise they do touch.
Thermomix scones - best ever!
But I never put things in my scones - like fruit or nuts or flavours (though I will make an occasional exception for pumpkin).
