I'm trying to get into the habit of doing a big bake up once a week.
What yummy biscuit recipes are out there - savoury or sweet I'm looking for all kinds
for a basic pastry/shortbread type bikkie it is
1cup s/r flour
1 cup flour
1 cup icing sugar
sift a few times
rub in 125grams butter
add 1 egg and roll and cut what ever shapes you want.
this can also be used as a pastry base for lemon merangue pies/tarts I also use it as the base for cakes, ie cut a cicle put it into a patty pan tin add a spoon full of jam and top with basic cake mix.
you can also add cocoa to it and make chocolate bikkies, or ice it with pink icing and make 100s and 1000s bikkies
My Mum always made these, now I make them. It's from a flour company called Be-ro.
Rich Biscuits
225g SR Flour (use a biscuit/cake flour if you can)
100 caster sugar
100 butter or margerine
1/2 lemon, grated rind and juice
1 medium egg beaten
Heat oven 180 deg, grease two baking trays or line with baking paper
Mix flour and sugar, rub in butter or margerine
Add lemon rind, juice and add sufficient egg to make a stiff dough
Roll out thinly and cut (using whatever shapes you like)
Bake for 15mins, makes around 24.
