Like Jas said, I'd cut up the excess and freeze them in smaller portions (even in ice cube trays and then in the zip lock bags once they're frozen). Then you can enjoy them in various ways year-round. Yummy! I love mangos!
Yummmmmm!!! My dad pulps them and puts them in little containers in the freezer. Then uses the slushy pulp for mango daiquiris. They are super yum.
We like mango chicken here. It's quite a sweet recipe but we like it. Put some butter, cumin, cinnamon and garlic in a frypan (you can whack in some cardamom too if you like it... I don't much like it, LOL!) Then brown some chicken in there. When it's almost cooked, add some mushed up mango (I use it from the tin but it'd be soooooooo much yummier fresh!) and some cream or light evaporated milk if you're wanting something a little healthier. Serve with rice.
Enjoy those mangoes. We have fleeced a couple from my parents because we're too tight to buy any ourselves, LOL! Too exxy down here

Had a college friend whom was Indian and she invited me over one day for lunch to try some different Indian dishes and the dessert was yummy but simple to make ... she cubed a Mango and slightly freezed it (not solid frozen) and poured chilled coconut milk or coconut cream all over them in a bowl before serving
