uniced cupcakes are great - and they are much easier to ice when they are still frozen
I am yet to meet a muffin that didn't freeze well. I generally individually wrap them anyway because they are for lunches - but I have put whole trays in the freezer and then bagged them a couple of hours later (like Rouge suggested)
