    Thumbs up White Chocolate & Passionfruit Mousse

    Ok I had all the ingredients to this mousse... that is how unbelievably easy this is! I am so getting brownie points tonight... Passionfruit is Marc's fave

    Now I halved the recipe and was able to make 2 big scotch glassfuls and 2 half small glassful's (for the kids). I also omitted the raspberries as I didn't have any but they aren't necessary

    300gms white chocolate
    6 eggs seperated
    10 passionfruit (or 2-3 tins - I did one tin for half the recipe)
    400g of fresh raspberries (I omitted this from the recipe)

    Melt the white choc in the microwave, set aside to cool.
    Whisk the whites till you get wet firm peaks (so its solid but still slippery).
    Add the egg yolks to the choc and stir vigorously. Then stir in the pulp into the choc mix. Then carefully fold in the whites in 3 lots. Thats it. Divide the raspberries between 8-10 glasses and pour mousse into glasses and allow to set for a few hours in the fridge. You could also garnish with fresh raspberries if you prefer instead of having them at the bottom of the glass.

    Cailin,

    I love the sound of this, but I don't like passionfruit. Can I use mango? I have 4 big ones in my fridge atm.

    I reckon you could... Probably 1 whole mango for the large batch and half for the other I think the tin of passionfruit is about 110 gms?

    With mango it would probably taste like Mango Pudding

    Yeah im not a passionfruit fan either but love mango so im gunna give it a try over the weekend aswell.

    You might even be able to blitz the mango (about 170gm's worth or double for the full batch) and have like puree YUM!

    Oh yum! Sounds devine. Going to have to try that one, but am guessing I shall have to wait 'til after delivery (no uncooked eggies for me).
