I'd try to keep it to a 1 page letter, to be honest - with a 4 - 6 page CV - listing work experience, and maybe a page of 'skills'.... I usually have my skills listed under headings... such as....
adminstration skills, tutoring/training skills, professional skills, other skills....
when I used to work in employment services, that usually how I wrote them for others - and TFB is right.... employers never wanted to read long winded applications that were sent, they always looked at the CV for the information, and wanted it easy to find
