I always have potential new staff come in and work in the rooms with the staff for at least a day - I make sure they understand that it is a voluntary trial day unpaid. I find that the genuine ones are always happy to do this - and it gives me a good idea of how they might work out as the other staff are able to get a feel for their ability, etc.
