OK i just made the rice milk condensed milk and it taste not too bad actually.... but it's not as thick as traditional in a tin condensed milk.... so maybe i should have put more sugar in it?!? the recipe didn't seem to be enough sugar in my mind... but it does tast very sweet......
I'll let it cool and tomorrow I will attempt the vegan cheesecake.
My brother's recipe is:
1 1/2 packs of biscuits for crumbing
1 tin of condensed milk
2 packets of philly cheese
juice and zest of 1lemon
2-3 tablesppons of butter for melting into crumbs for base
1 1/2 tea spoons of gelatin
make the base with crumbed biscuits and melted butter combines. press into a tin or dish, put in fridge til cool.
mix cheese, condensed milk. lemon and gelatine until smootha nd creamy.
pour wet mixture over cooled base and put in fridge over night.
when set, you can put a jelly and fruit layer on top of the cheese layer.
So with my condensed rice milk, i should be good to give it a go!
