I do all my cooking and everything with rice milk. I guess if you are on a wheat free as well as dairy free your most difficult thing is keeping things variable. If you google pig in the kitchen you may find a blog that can help you.

Breakfast ideas:
eggs
bacon
smoothies, rice milk, bananas etc etc...
rice mllk and gluten free cereals like crunchola.... Crunchola is awesome

Lunch:
crustless quiches (as previously mentioned)
left overs!!! Stir fry, wraps with gluten free wraps, sample plate.... my DD doesn't like sandwiches atm, so we do Japanese bento boxes with snacks and a tin of tuna or hummous and carrots.... we try to add protein to her lunch as well as one vegetable to keep her full as well as meet her daily standards

Dinner:

Roast meat/chook & veges
Stir fry with rice or rice noodles
Soup.... potato and leek etc etc
bolognaise with rice noodles
sausages with mashed potatoes.... aka bangers and mash
meat & 3 veges
rice noodle salad... basically rice noodles and a few raw veges as well as ham/steak/thinly sliced meat.... I do it with a vietnamese dressing

Snacks:
sorbet
fruit
rice crackers and hummous
vege sticks and dips
plain pasta
