    Recipe for a cake containing a vegetable.

    Hi, our child care centre has a really weird policy and it states all cakes (birthday) must contain a vegetable eg carrot cake,

    Does anyone have a yummy recipe (maybe choc and zuccini) they have tried and tastes yummy?

    I've heard of chocolate cake with beetroot in it? Maybe try one of those recipe websites they have some great one's.
    Interested to hear what others have too

    Carrot cake is nice!
    Do they allow Banana Cake (bread)? Fruit cake?
    I don't have a recipe but Pumpkin Cake would be yummy too.

    I have a yummy carrot cake recipe if you want it. I have heard of choccie cakes with potato in them I think too. Does that count?

    Chocolate beetroot cake is YUM! I have some beetroot here I am about to turn into cake so I'm on the hunt for recipes too!

    I made an AWESOME pumpkin and coconut cake that I found on a recipes website... It was the most delicious cake I've ever tasted. Google it

    I agree with chocolate & beetroot cake!

    I don't have a recipe sorry, I only have one for a choc & beetroot pudding.

    I am sure you'd be able to find something on the Taste website though.

    I have a choc Zucchini cake recipie

    Ingredients.

    Wet mix :

    3 eggs
    3 teaspoons vanilla essence
    ½ cup milk
    1 large grated zucchini (leave skin on)
    ½ cup oil
    1 teaspoon salt
    1 teaspoon bicarb soda
    ¼ teaspoon baking powder
    2 cups sugar

    Dry mix :

    2.5 cups SR flour
    ½ cup cocoa

    Method.

    Use large mixer bowl, combine wet mix ingredients & sugar thoroughly. Sift dry ingredients and combine with wet mix thoroughly. DO NOT OVER-BEAT, as this will make the cake tough.

    Pour into large baking tray, or muffin / patty pan trays.

    Bake in slow oven for 45 minutes, or at 150 for 1 hour. (Or less if making muffins etc).

    Foolproof. Yummy. Good even on day 3, if it hasn’t already been devoured…..Enjoy.

    You can make a chocolate mud cake with mashed potato, it keeps it really moist

    wow thanks for all the response. From what i can work out, it can be any cake as long as it contains a vegetable. i was thinking about a banana cake but aparantly thats a no no as its not a vegie. I think i might try the Choc beetroot, if that fails then the zuchini one.

    Yules: do you think i could omit some of the sugar? or does it need it all to make it tasty?
