While I don't have a fussy eater I have seen/heard a few tips that might make you feel better.

Toddlers are naturally wary of foods and sometimes need to be 'offered' them up to 20 times before they'll take them.

Have you tried making mini-pizzas using English muffins and cheese slices on the top (so it melts all over the vegies, etc and hides them!)? My DD loves them and I can put just about anything under the cheese.

Sometimes controlling food is the only thing toddlers can control and this is their way of exerting their influence. So don't get in a battle of wills with them, or spend an entire meal cajoling, checking how much they've eaten, etc, etc. Attention = toddler winning.

And if any of you have Foxtel there's a great program on Lifestyle channel at 10:30am on Thurs morning. It's called House of Tiny Tearaways and I'm a huge fan. They often deal with children with eating problems (and believe me, what you have described in your DS's diet Steph would look extensive compared to some of them!), as well as behavioural problems, and show parents how to work to solve them.
