I second all the things you and the others have suggested, yum!
my 1yr old goes through phases and this week:
DD is loving baked ricotta.
if you mix about 150/200g ricotta (from deli section) with some cheese, and other goodies then press about 2 tablespoons into a non-stick muffin tin and then bake till golden on top and set. They can be eaten warm or cold and can be made with anything you can come up with! I have make them with sundried tomatoes and mushrooms, silverbeet, grated zucchini and carrot.. the list is endless! (plus I love them as a snack too!)
DD also loves tuna, straight from the tin or on something, cherry tomatoes to eat like grapes, cold pasta or noodles to play with and eat, ohh, and on the 'why only at breakfast' theme, she looooves bircher muesli with yogurt any time of the day!
I often make a plate of bits n peices with some chopped up fruit and veggies, cheese chunks, ham, boiled egg quatered and a slice of buttered bread quatered. DD loves it! Otherwise an omlette with grated veggies like carrto, zucchini, mushrooms and cheese. Half an avocado with some crackers and hummos (DD loves this too). Boiled eggs with toast fingers. Potato salad with peas, corn, carrot and tuna (sounds yuck, but DD loves it and it's actually pretty yum!) Mini pizza made from muffins or pita pockets with tomato paste, a slice of ham, a peice of pineapple (tinned) and grated cheese on top, grilled. Jaffles with egg or baked beans or tinned spaghetti or tuna and cheese or ham and tomato(careful can get really hot!), or chicken cheese and avocado...lots of fillings here!
thank you everyone for your replies some really great suggestions and I will try them all! especially the baked ricotta, i think ds would really love that one, he also loves eggs so there is quite a few things i can make with those.. great ideas ladies off to the kitchen i go..
