With the pull apart, just use normal bread dough (with the dough setting), then roll it out flat, then put whatever fillings you like on the dough, roll it into a sausage then cut scrolls off, then what I do is pack the scrolls together (like little buns so it makes like a big round bun). You can do them anyway you like. You can even pack the little scrolls together into a loaf tin and bake it that way.
