Another thing with metformin I was told by my dietician, is to start off with small doses and work up to your prescribed dosage.
I had the upset belly thing when I first started and stopped taking it cause I figured it just wasn't worth it. When I told my dietician, he suggested taking half a tablet once a day for a while, then building up to another half, until over time you are at your proper dosage. That worked for me.
There's quite a few different books around on Low GI diets, and on PCOS, it's worth looking around.
