I make thai style burgers with it sometimes (shallots, egg, carrot grated, ginger, lemongrass, sometimes some red curry paste). We have them on turkish bread with aoili and cucumber/lettuce/tomato.
Otherwise anyway you would use beef mince.

Yes I second the chicken sausage rolls suggestion. And get some fancy-shmancy flavoured seasoning like "Tuscan Seasoning" or "Cajun Flavour" or something, and make them a bit spicyAnd sausage rolls can be eaten hot with a salad for dinner, and keep the leftovers cold for lunchboxes the next day mmmmmm!!!!

I brought chicken mince today too and am going to attempt a chicken pasta bake -
750 g c/mince
375ml chicken stock
1 tim chopped tomatoes
2 tbsp tomato paste
3 cups of pasta
Brown mince in frypan, then add stock, tomatoes and t/paste and mix well. Place uncooked pasta into baking dish and pour over chicken mixture. Bake in oven on 180 for 20 minutes. Top with cheese and bake for another 20 minutes.
I've only got 500g of chicken mince so I think I will use slightly less stock and pasta, and will add some spinach and finely chopped carrots. Hopefully it will taste ok! Seems pretty easy to make which is always a plus for me.
I have a recipe somewhere for 'Healthy Chicken Sausage Rolls" which i think was from the Taste website. I know they were a big hit with DS and my niece and nephew. Very easy to hide vegies in![]()
I use chicken mince to make a satay mince.
