    Meatballs - as requested.

    Here is my lovely meatball recipe as requested by some lovely ladies . There is enough here to freeze another meal! I am trying to remember quantities LOL, some may need to be adjusted as I just throw things in.

    Meat Balls
    800g-1kg Mince
    1-1 1/2 cups bread crumbs
    1 egg
    4 cloves garlic
    1 onion
    1 tbsp Mixed herbs
    Salt & pepper
    Flour for rolling

    Finely chop onions and garlic (you can crush the garlic if you wish). I put the onion and garlic in my Tupperware quick chef 2 and it chops them up perfectly for this, but normal cutting is fine too. Put all ingredients into a bowl and mix in with your hands (i like to wear those disposable gloves for this as it can be quite messy!) Sprinkle some flour on a chopping board and dust your hands with it, and roll the balls into any size you wish. Put them in the fridge while you prepare the sauce, or you can roll them in advance.

    Sauce
    1-2 onions (depending on size)
    4-6 cloves of garlic (depending on how strong you like it)
    2 cans chopped tomatoes
    2 tbs tomato paste
    4 cups beef stock
    1 jar of Tomato Pasta sauce (I'm not sure what it's called but it's on a tall skinny bottle, 750mL. I use the aldi one and it just says tomato cooking sauce)
    2 tbs Mixed herbs
    1tsp Oregano
    Salt & pepper
    1 tsp sugar

    Brown the onion and garlic in a little olive oil. Add cans of tomatoes and tomato paste. Pour in bottle of tomato sauce, followed by beef stock. With the beef stock, add 3 cups first and add more if needed. I just use the campbells liquid stock, and went through a whole container which is 1L, It really depends on how much the tomatoes soak up etc, and also how runny/thick you like your sauce. add herbs, salt, pepper, oregano, and sugar. Bring to the boil, and turn down the heat and cover. Sometimes you might need a bit more salt and pepper, and I sometimes add a tsp of beef stock powder, it just depends on ther flavour of tomatoes... I also add some chilli powder if there are no kids having it

    Brown the meatballs in a fry pan with a little olive oil (a non stick fry pan is best as it keeps the shape of the meat balls better). Add the meatballs to tomato sauce, and cook for 45 mins-1 hour covered on a low/medium heat. Serve with spaghetti.

    I hope I haven't missed anything, if I have I will just edit the post. I am cooking it tonight so I will measure things properly!

    Thanks for that - sounds amazing - will get the ingredients that i haven't got already when i go shopping on Friday and definitely give them a whirl
