Can you eat Philidelphia cream cheese? If so what about stuffed chicken breasts? What you do is cut a pocket in the chicken (a slit in one side) and then stuff it with cream cheese (I like to use the little squares of flavoured cream cheese) and thinly sliced mushrooms. Pan fry them until they are golden brown, season with salt and pepper and cook in the oven on 180 degrees for 45 minutes. Turn oven off and allow them to rest.
I usually make a sauce of spring onions, sour cream and then thin that a little with milk. But with your intolerance that probably won't do. Ummm you could do a cranberry glaze.
1 jar of cranberry jelly
1/2 small onion diced (you can used dried onion flakes)
1 tbsp brown sugar
1 tbsp tomato sauce
Mix all the ingredients together in a small saucepan, allow to gently simmer until sugar has melted. Serve warm.
Serve it all with mashed potato and whatever other veg you want.
Otherwise, why not one of the many hearty meals in the SC thread? Or you could make the beef and guinness in your SC and then make them into individual pies. If you put the beef mix into ramekins and then put a puff pasry lid on that (grease the edge of the ramekin, make a small slit in the top and then glaze with a beaten egg), bake until pasty is puffed and golden. Maybe serve with chunky fries and again whatever veg you want.
