Recipes using mince are always good, mince is cheap to buy especially in bulk, and there is so much you can make...meatballs, lasagne, bolognese sauce. I did just have a whole stack of ideas for you...but just forgot what they were. sorry!
almost anything with a saucy base will freeze nicely - if you have a slow cooker, you can cook heaps in there
braises, curries, soups - the list is endless.
at the moment our freezer has about 75 frozen meals in it - 3 decent days of cooking with three slowcookers on the go! there is vegie soup (pumpkin base, lots of veg), braised lamb, beef and red wine caserole, spag bol (with pasta frozen into it), chicken bolognaise (no pasta), curried chicken, pasta bake (spag bol base with cheesy white sauce - in the tins you can put in the oven), vegie bake (huge amount of vegies, stir fried in garlic butter, then smothered in cheesy white sauce), chow mein (some with, some without rice), curried mince concoction with pasta (no idea if we will ever be able to recreate it, but damn it is nice!).
you can also make up meatloaf (without cooking) - into those small disposable tins (about $1.80 for a six pack of the small ones), sausage rolls (mostly cooked, just reheat), burrito/taco meat mix in meal sized serves (defrost and reheat - ready to go - have it as they're meant to be, or on top of wedges with cheese - delish!), any type of soup (haven't come across one yet that doesn't freeze), lasagne (in trays)
ummm, think that's about all i can think of - definitely look in the other threads for ideas though! with DH's work, we have a LOT of food that gets frozen and then reheated, and so far, so good - no failures!
I made lots of bolognaise, quiche and zucchini slice. I also made some savoury and sweet muffins and banana bead to freeze so if we had visitors over i had something to offer them.
I wasnt going to make ahead any meals but so glad i did. i also filled the freezer with marinated meats as having a bub in summer it was easy for dh to cook dinner on the bbq.
