    Apricot Chicken Recepie

    Hey Guys,

    I have my cousin coming up from adelaide to stay with us for awhile becasue her parents are getting a divorce and they are fighting alot so they asked if should could come up and stay with us for awhile until they try sort some stuff out.

    I was wondering if anyone had a great apricot chicken recepie as i know this is her favourite meal and i would like to suprise her by cooking it for her. Any help would be great.

    This is out of a food mag, sorry i havn't tried it! Sounds pretty easy and straight forward though!

    Ingredients (for 4)
    1/2 cup plain flour
    1kg (8 pieces) skinless chicken cutlets or drumsticks.
    2 tablespoons olive oil
    1 large brown onion, peeled, cut into thin wedges
    2 garlic cloves, crushed
    1 tablespoon Moroccan seasoning blend
    405ml can apricot nectar
    1/2 cup Dried Apricots
    1 cup couscous
    1/3 cup flat-leaf parsley leaves, chopped
    Method
    Place flour and salt and pepper in a shallow dish. Lightly coat chicken pieces in seasoned flour, shaking off excess.
    Heat 1 tablespoon oil in a deep, large, heavy-based frying pan over medium heat. Cook chicken, in batches, for 2 to 3 minutes each side or until golden. Transfer to a plate. Repeat with remaining chicken and oil. Cover and set aside.
    Add onion and garlic to frying pan. Cook, stirring occasionally, for 3 to 4 minutes or until tender. Sprinkle Moroccan seasoning over onion and stir until well combined.
    Stir in apricot nectar. Bring to the boil. Reduce heat to low. Return chicken to frying pan. Cover with a lid or double piece of foil. Cook for 20 minutes. Remove cover and add apricots, pushing them into the sauce. Cook, uncovered, for a further 20 to 25 minutes or until chicken is cooked through and sauce has thickened.
    Meanwhile, place couscous in a heatproof bowl. Pour over 1 cup boiling water. Cover. Stand for 5 minutes or until water has been absorbed. Stir with a fork to separate grains. Spoon couscous onto plates. Spoon over chicken and sauce and sprinkle with parsley. Serve.

    This is from one of the Symple too Good to be True books, my family love it.

    500g chicken breast
    1/2 cup dried apricots
    2 1/2 cups apricot nectar
    2 teaspoons chicken stock powder
    1 cup onion diced
    1 cup carrot sliced
    1 cup celery sliced
    1x300ml jar mild salsa (or however spicey you would like)
    1 teaspoon curry powder
    1 cup water
    1/4 cup plain flour

    Preheat oven to 180 degrees fan forced.
    Dice chicken. Prepare veges and cut dried apricots in half. Coat chicken in flour and place in a non-stick frypan that has been generously coated with cooking spray, toss meat in pan until browned on the outside. In a large casserole dish (that has a lid) place all ingredients, stirring together until combined. Place lid on casserole dish and cook in oven for 11/2hrs or until veges are cooked to your liking.

    Even easier is:-

    Chicken drumsticks
    1 packet of french onion soup
    1 405ml can of apricot nectar

    Just mix it all together and chuck it in the oven. Sooo yummy, my DP and kids would eat it everday if I would let them..

    yep the french onion soup and nectar is the easy way and extremely tasty.

    I use the recipe on the back of the Berri Appricot Nectar tins! Easy!

    I use chicken noodle soup with the nectar sometimes too - yummo! I love it - and it's delicious over mashed potato too!

    You can get a sauce mix for this too if you want to cheat, I think its McCormicks Moroccan (apricot) chicken.
    The sauce includes a recipe and the remaining ingredients

    I do it like this too but also add an onion and about 4 big carrots to make it a bit more interesting. Also I use skinned chicken thighs so you don't have to dissect the bones while you eat it

    After reading this thread, i went shopping and guess what is in the oven..................? Apricot chicken! Thanks for the dinner inspiration! : )

    I am a bit late with this but this is what I do

    Chicken thigh fillets (or any other cut of chicken)
    1 jar of Continental Apricot chicken
    1 can of apricots
    1 onion cut into wedges

    I put all these ingredients into a baking dish and bake on medium heat (180-200) untill cooked.

    Serve with rice and veges.

    It's easy and very yummy
