Caramel banana cake
This is soo easy and really yummy.
In one bowl combine:
2 ripe bananas
125g softened butter
1/4 cup milk
1 cup firmly packed brown sugar
2 eggs
1 1/2 cups SR flour
Mix with an electric beater until smooth and changed in colour. Place in cake tin (i use a baba tin but you can use 19cmx29cm slice pan) Bake in mod oven for about 40 minutes, cool before turning onto a wire rack.
Banana Cake
125 grams of softened butter
3/4 cup of sugar
2 eggs
2 cups of mashed ripe banana's
2 table spoons of milk
2 cups of self raising flour
Cream butter and sugar until light and fluffy, add eggs one at a time
Beat well
add mushed banana and mix thourily
add milk
sift in flour, put into 20 cm round cake tin and cook for 50 minutes at 180degrees
I usually make a caramel icing/ sauce to go on top with by heating up brown sugar and butter with a dash of milk until it goes bubbly and hot, and take it off the stove and leave it to sit until it cools and when it cold add icing sugar with it. Or leave it warm and pour it over a slice of cake.
If you think your two banana's arnt enough, then just reduce the other ingredients and make a little cake!!!

heres an easy recipe -
i am trying to remember it now.. it uses however many bananas you have (more bananas = more moist -) but its quick easy and ready in 20 mins.
ok, just looked it up - here goes:
2-4 medium ripe bananas
100g butter
1 cup sugar
2 eggs
1.5 cups SR flour
1 cup choc chips
mix butter sugar add all but choc chips. mix then fold in choc chips
bake 180c 20mins
they are YUM!! enjoy
Mash up the bananas, then add them to a cake mix and bake in a loaf tin.
Banana bread, yummy!

I have 3 ripe bananas, and I wanted to make banana fritters, and was wondering if anyone had some secret recipes or hints/tips on making the perfect fritters... i like the crumbed ones, but don't mind battered (though I've never made either myself!). How do you make the best fritters ever?
