Gee been a long time since I have made bread by hand, but really you don't need much at all.
If you have a stand mixer with a dough hook, then that is great, but you can do all the kneading by hand. I used to find it quite theraputic to knead, really should do it again myself. Just clean off a large area of bench space and keep your flour on hand.
Large bowl for placing the dough in for rising. Tea towel for other the top. Warm place for putting it, so beside a warm stove or near a heater, just not in an oven
Sorry can't help with a recipe, I would just be using google.
I used to make bread regularly without a bread maker. I prefer the freeform loaves anyway.
What you will need is basically, some clean bench space, a big bowl for mixing and your hands. And of course an oven and oven tray or bread tin to bake it. I will have a look for some recipes I used and post them later.
It makes it a lot easier if you do have a stand mixer to do the kneading for you (am currently looking into getting one), or a food processor to at least combine the ingredients. But with just a food processor, you'll probably have to do the kneading by hand. This is how I used to do it.
You can also use bread mixes. Most have instructions on how to do it by hand (the water quantity is a little different to make it less sticky s you can knead it. But I much prefer making it from scratch. You can experiment with different flowers, too. I love rye bread...
Home made bread is soooo yummy. It's quite easy and it makes the whole house smell fantastic.
I don't know if the yeasts are the same, sorry! We make bread and/or pizza dough at least twice a week in this place, but without recipe, we do it by feel. Here's what we do:
Dissolve 1 sachet Instant Yeast in a cupof hand-warm water, with 1tsp sugar.
Give it about 10 minutes to froth up.
Dump about half a kilo of flour into a large bowl, and make a well in the middle.
Using a fork, gradually work in some yeasty water until you get the consistency you want. Should all come together, and be a little bit springy. Use more water if you want to, or more flour (not too much more, or you'll need more yeast)
Flour your bench top, and then get into your therapeutic kneading! About 10 minutes usually does it.
Put your dough ball back in the bowl, cover with a wet tea towel, and put it in your sink.
Plug the sink and fill with warm water so it reaches about halfway up the side of the bowl.
Leave to rise for 30 mins-1 hour
Take dough out and knock it back a little bit (tiny bit more kneading but not too much.)
For loaf, put it in your tin, let it prove for about 10 mins.
For pizza dough, put it on your tray and build your creation.
For freeform, form it on your tray, score the top.
Bang it in a hot oven until it's golden and looking ready - 15-20 mins, depending on all sorts of things.
And there you have it - Bread Snuggly Style!
I am so going to go and make some now!!
ETA: No I'm not. We're out of yeast. GrrrrrARRRGHH!
