    yeah, just freeze them fresh. they will be fine

    Fresh is fine, otherwise I use Panko (Japanese Bread Crumbs) in place if I don't have dry crumbs... but honestly fresh is fine.

    I don't know how fine the breadcrumbs you got are, but what my mum does is she puts old bread (few days old, rather than binning it) on an oven tray and puts them in the oven and lets them bake/cook (i dunno!) until they are really hard, not black or anything, dark golden brown and then wizzes them through the blender until they are really fine. Puts them in an airtight jar and they last for ages.

    i guess you can too, just brown them in the oven and wizz them in the blender and put in a jar.
