I made some great cornflake cookies awhile ago. Just google cornflake cookies and heaps of recipes come up. I found they were even nicer if I added a little orange rind and juice.
On the side of the coles corn flake box I just put in the recycling box, there is a jam drop biscuit (you know, like the thumb print biscuits). I can post that later if you want. And a nice corn flake and sultana biscuit recipe too.
We are in the process of als making easter eggs for the family...... save some money AND gives DD and I something fun to do together. I figured I might mix some of the rice bubbles in some of the choc mixture. Bit like a crunch.
200g butter, softened
1 cup castor sugar
1 extra large egg
1/2 tsp vanilla extract/essence
2 cups plain flour, sifted
2 cups corn flakes, lightly crushed with hands
1/3 cup strawberry/raspberry/plum or apricot jam
Preheat oven to 180 or 160 fan forced.
Beat butter and sugar together until creamy.
Beat in egg and vanilla.
Mix in flour and corn flakes.
Roll generous tablespoons of mixture into small balls, place on a lined tray and flatten slightly.
Make an indent in the centre of each cookie with your thumb and fill with jam.
Bake for 18-20 mintutes until firm and slightly golden.
Stand on tray for 10 minutes then cool on wire rack.
Will keep in an airtight container for 3-4 days.
